I'm interested in this tank (I'm still doing the Schneider).  There seem to be several kits, which are good?

 

The picture on the box of the Hobbyboss kit seems to show a much more garish camouflage than I believe the real tank would have.

Long debates about the "correct" colours, for all WW1 tanks.
For what it's worth, this is how Saumur's painted the only surviving St Chamond.

For instance, in Saumur, the Saint Chamond is without camouflage :

In some weeks, in Paris (Portes de Versailles), for Rétromobile 2017, the new camouflage will be repainted.

Saumur'Schneider M2 and Renault will get also here.

Have you checked out Frederik Astier's book "Scale Modelling WW1 Tanks"?

I thought his take on the St-Chamond was quite compelling. Also Book Depository has this book

on special at the moment.
